Why this way: Decaffeination makes the bean more porous, so it extracts faster but carries less body. Slightly hotter water and a coarser grind restore the balance.
About our dark: Our dark roast stops at around 18% development and never reaches second crack — so it takes hotter water than a typical "dark roast" recipe would tell you.
If it's off: Go one step coarser than usual. Decaf over-extracts easily.
