Understand what you're drinking

Every bag says "medium", "washed", "1800 m", "Bourbon". Here we explain what those mean — not so you become an expert, but so you can put into words what you like.

Light roast More acidity, more fruit, less body. The taste of the origin stays in front. Washed process The fruit is removed before drying. Clean, predictable, and it shows you the origin. Altitude Higher up it is colder, the cherry ripens more slowly and the bean gets denser — usually more flavour. What do the tasting notes mean? Not an additive, not a flavouring. What the coffee actually contains — and what you actually taste. Medium roast The balance. The fruit stays, with a caramel body underneath. It works with almost any machine. Dry (natural) process The bean dries inside the fruit. Winier, sweeter, fruitier — and harder to get right. Coffee varieties — why they matter Like grapes: the variety decides what the coffee is capable of — and how fragile it is. What does "specialty" actually mean? The part of a 100-point scale above 80 — and a chain you can follow back to the farm. Dark roast Body, chocolate, molasses — but our "dark" is not burnt. We never go as far as second crack. Honey process Halfway between washed and dry. Part of the sticky layer stays on the bean. Bourbon One of the original varieties. Sweet, round, complex — in exchange for a small crop. Freshness — when is coffee at its best? Not on the day it was roasted. And not six months later either. How is coffee decaffeinated? With water or carbon dioxide, before roasting. Good raw material makes good decaf. Caturra, Pache and the other mutations Natural mutations that give a shorter bush and an easier harvest. Castillo A Colombian variety bred against coffee leaf rust. It used to be looked down on; today that is not justified.

The best lesson is two cups of coffee

One cup on its own is just "good coffee". Two side by side, and you taste the difference immediately. That is why we roast the same green coffee three ways.
