Castillo

A Colombian variety bred against coffee leaf rust. It used to be looked down on; today that is not justified.

Castillo was bred by Cenicafé, the Colombian coffee research institute, above all to resist coffee leaf rust — the fungal disease that took out a large part of Central America’s crop around 2012.

The old accusation: that flavour had been sacrificed for disease resistance. For the early versions that was partly true.

Today: in blind cuppings a well-grown, well-processed Castillo regularly beats Caturra. The difference comes far more from the origin and the processing than from the variety.

In our range: our Colombian Gran Galope lot is Castillo — pear, cooked apple, orange. It is the easiest coffee of ours to fall for.
