Where it comes from
A micromill in the Heredia part of the Central Valley, where neighbouring farms bring their cherry. Juan Ramón Alvarado Rodríguez and his family are fourth-generation producers; they have been building out the processing since 2003, and added a cupping lab and a roastery so they can taste what leaves their hands. This lot is Villa Sarchí, dry processed — hence the spice, the cooked cherry and the cocoa. “I hope to God that I will die a farmer, and I hope my son does too,” Juan Ramón says.

Freshness and storage
The bag carries the roast date, so you can see exactly when it was made.
Whole bean is best between 4 and 8 weeks; ground, a few days. Keep it in a sealed bag at room temperature, away from light — the fridge doesn't help, and the freezer only works if you don't keep opening it.

How to brew it
The filter already holds the ground coffee — 11 g, exactly one serving. All you need is a mug and hot water.
- Tear the sachet open at the mark and take out the filter.
- Fold out the side tabs and hang the filter on the rim of the mug.
- Pour just enough hot water (92–94 °C) to cover the grounds and wait 30 seconds. That's the bloom.
- Top it up in two or three pours, 180–200 ml of water in total.
- When it has dripped through (2–3 minutes), lift the filter out and bin it. Done.
Too strong? Add a splash of hot water to the mug. Too weak? Pour more slowly next time.
